Healthy Pumpkin Pancakes

This scrumptious and festive pancake recipe is a family favorite! Whip up the batter in your blender and then pour directly into a sizzling skillet. We also love it because of the nourishing ingredients!

  • 1/2 cup canned pumpkin
  • 2 eggs
  • ⅔ cup milk of choice
  • 2 teaspoons vanilla extract
  • 2 tablespoon honey or maple syrup
  • 1 ½ cups rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 2 teaspoons of pumpkin spice
  • 1/4 teaspoon salt
  • Coconut oil, butter, or olive oil for cooking

Directions: add the dry ingredient to your blender first and then add the wet ingredients, blending until smooth and pourable. Heat a skillet until your oil is starting to sizzle. Pour your pancakes into skillet directly from blender if you desire. Cook through and enjoy! Service with chopped nuts, bananas, or peanut butter – you choose!
